All-Time Favorite Keto Cauliflower Rice Recipe

If you’ve ever tried to reduce your carbohydrate intake, you know cauliflower is your friend. It seems like there’s almost nothing you can’t substitute for cauliflower these days (pizza crust, crackers, etc.) but cauliflower rice is definitely the classic.

And it’s no surprise that we turn to cauliflower as a substitute – a 3/4 cup serving of cauliflower rice has only 2 net carbs and 20 calories, compared to about 32 net carbs and 165 calories in a 3/4 cup serving of brown rice.

The only problem? It tastes like cauliflower. I remember the first time I tried cauliflower rice thinking “how do people actually eat this? This tastes NOTHING like real rice.” It was bland AF, hard and crunchy, and just not appealing.

Well I’ve been working on spicing up my cauliflower rice ever since, and finally nailed down the formula for making cauliflower rice that is seriously hard to stop eating – it’s that good.

The key is the combination of spices and healthy fats to make it savory, hearty and actually filling! 

WHAT YOU NEED

  • 3 cups cauliflower rice (1 bag frozen cauli rice from trader joes)
  • 2 tbsp full-fat canned coconut milk
  • 1/2 tbsp grass-fed ghee (clarified butter with the lactose removed)
  • 2 tsp Coconut Aminos (gluten-free soy sauce alternative)
  • 1 tsp Braggs Liquid Aminos (gluten-free soy sauce alternative)
  • 1/2 tsp garlic powder
  • 1/2 tsp pepper (or more to taste)
  • Couple large dashes Trader Joe’s Umami seasoning
  • Juice of 1 lime
  • Additional salt to taste (depending on the aminos you use – different types have more or less sodium)

HOW TO MAKE IT

  • Add frozen riced cauliflower to a large pan (I love my cast iron skillet) and cook over medium heat until the frozen cauliflower starts to release water and soften
  • Stir in coconut milk and ghee, and cover the pan and let simmer over low low-medium heat for ~5 minuted, stirring occasionally
  • Once cauliflower is soft and the liquid is absorbed, add in all remaining spices
  • Top with scallions if serving as a side dish, or use the cauliflower rice in your meals throughout the week in place of a grain

Make it a meal by adding a fried egg (or 2) and lots of sauteed veggies!
