Skinny Spicy Cucumber Margarita
It’s May 1st people and you know what that means? Only 5 more days until one of my favorite holidays – Cinco de Mayo!
Cinco de Mayo wouldn’t be complete with chips & guac, and of course, a margarita. Because really, is there anything better than chips & salsa and a cocktail? Not in my book. But if you’re looking to cut back on the sugar (for your health or just to avoid a hangover) – this drink is for you.
It combines everything I love in a cocktail – tequila, some spice, something green, and of course – ZERO SUGAR! This recipe uses the best easy hack for cucumber juice that will make you look seriously fancy, and make your drinks extra refreshing.
WHAT YOU NEED – SKINNY SPICY CUCUMBER MARGARITA
Depending on how many drinks you’ll be making, stock up on the following
- Blanco Tequila
- Limes
- Cucumbers
- Jalapeños
- Salt
- Ice
RECIPE – SKINNY SPICY CUCUMBER MARGARITA
- Start by making the cucumber juice
- Peel 1 cucumber to remove skin
- Cut into 1 inch chunks and add to blender with 2 tbsps water and a pinch of salt
- Blend for 1 minute until smooth – add more water as needed – no need to strain!
- Add 1-2 jalapeño slices to your glass (rinse & remove the seeds unless you REALLY like spice!) and muddle
- Add the following:
- 1.5 oz blanco tequila (1 shot glass)
- 1.5 oz cucumber juice
- Juice from 1/2 lime
- Couple drops liquid stevia
- Stir & fill the cup with ice
- Fill up the rest of the way with lime sparkling water and garnish with cucumbers
*If you want your drinks a little sweeter, you can also add just a splashhh of margarita mix or triple sec to add a little more margarita flavor
