Reishi Cold Brew Chia Yogurt Parfait
This meals combines three things I am all about:
- Quick & easy, make-ahead meals/ snacks in mason jars
- Companies that make legit products with no added sugar
- Coffee in any form
Enter the perfect high-fat, high-fiber breakfast (or snack) that’s full of caffeine but won’t leave you jittery: a mason jar loaded with coconut yogurt and chia seed pudding made with REBBL’s Reishi Cold Brew. The trick to avoiding a caffeine overload? The fat (in the coconut yogurt and coconut milk in the cold brew) and fiber (chia seeds and acacia fiber in the cold brew) combined the with the caffeine promotes slow and steady digestion, and keeps you feeling full all morning.
To add to this effect, you have the reishi in the cold brew. If you haven’t heard of reishi, it’s a mushroom, that falls into the very trendy “adaptogen” category. But as trendy as adaptogens are right now, reishi stands up to the test. It’s been used in Traditional Chinese Medicine for over 2,400 years, and has been aptly named “the mushroom of immortality”. A quick Google search and you’ll find studies on studies praising the healing powers of reishi, for everything from fighting tumor growth, supporting the immune system, supporting hormonal function, to improved liver detoxification. One study even found reishi to be protective aganist moderate alcohol intake in rats. Reishi is also known to have a calming effect on the body, making it great before bed, or in this case, giving a nice balance with the upper of the cold brew.
WHAT YOU NEED
- 1/2 cup REBBL Reishi Cold Brew (make sure you get the one with only 1g of sugar!) *You could probably also do this with any cold brew, but it won’t be as thick
- 1/2 – 1 cup sugar-free, dairy-free yogurt of your choice (I used So Delicious’s Unsweetened Coconut Yogurt)
- 2 tbsp chia seeds
- Toppings of your choosing: I did cinnamon, coconut flakes, cacao nibs
- Optional: you could add an unsweetened protein powder to the cold brew/chia concoction if you’re looking for extra protein
HOW TO DO IT
- Overnight, soak 2 tbsp chia seeds in 1/2 cup Rebbl cold brew (I find the easiest way to do this is to throw them in a mason jar and shake it up with the liquid)
- In the morning, layer your cold brew chia seed pudding with cashew yogurt
- Add toppings (coconut flakes, hemp seeds, chopped raw nuts, cacao nibs) to your heart’s desire
